Some folks find a particular red wine too hard and bitter from its tannins while others think it’s fine. Certain people experience some whites as extremely sour from its acidity and others don’t mind it at all. It’s all a matter of sensitivity to these components and where your threshold lies. The key to overcoming this is to compare tasting notes with other tasters discussing how they perceive a wine’s components. Once you realize that you have a high or low threshold or sensitivity to a particular component, you can compensate for it to a certain extent.
